Ninety percent is a high-rye bourbon (35% rye) that Dedman re-barrels for nine to 12 months in new oak at two char levels, #3 and #4. Char number is how hard the inside of the barrel gets burned. A higher char leaves more caramelized sugar in the wood for the whiskey to pull out, and that's where the sweetness here comes from.
