Celosa Rose Tequila

This tequila was filtered clear, then turned pink.

Celosa starts with a blend of blanco and reposado tequila and runs it through activated charcoal, which pulls the color out. That's what a cristalino is: aged tequila filtered back to clear. Then Celosa puts it back in wood. The blend rests for 28 days in French oak barrels from Napa Valley that previously aged Pinot Noir and Cabernet Sauvignon. Celosa says those barrels give it the soft rosé color and a light cherry top note, and calls the color natural.

The label calls it Joven Rosa. Joven ("young") is the legal class tequila uses for blends of blanco and aged tequila, and Celosa says Joven Rosa is a new category it was the first brand to launch.

The agave is seven-year-old Blue Weber from a single estate in the highlands of Jalisco, and the tequila is made at Hacienda la Capilla. Celosa cooks the agave for eight hours in autoclaves, which are big steam pressure cookers, then lets it rest for four hours. It ferments for 72 hours and is distilled twice in copper alembics. The maestro tequilero (master distiller) is Marco Plaza, and the producer says more than 70% of the distillery team are women. Celosa also describes the tequila as additive-free.

The family behind it goes back a long way. Celosa was conceived by Jose Alonso Beckmann and Esteban G. Beckmann, with cousin Javier Alonso and friend Paul Pietrini, and the brand says the Beckmanns are a 12-generation tequila family that founded Jose Cuervo in 1795.

The bottle has a twisted neck, which Celosa says stands for tequila meeting red wine. Mexican artisans make the cap by hand from black marble, so no two patterns match, and the punt is molded to look like an agave heart.

At 80 proof, try it neat first. Celosa's own house cocktail is the Jealous Martini.

FAQ

Why is Celosa Rose pink?
Celosa rests the tequila for 28 days in French oak barrels from Napa Valley that previously held Pinot Noir and Cabernet Sauvignon. The producer says that's where the rosé color and the light cherry note come from.

Is the color added?
Celosa says no. It calls the color natural, the result of the red wine barrels, and describes the tequila as additive-free.

What does "joven" mean on the label?
Joven means "young." In tequila it's the class for blends of blanco and aged tequila, which is what this is: blanco and reposado, filtered and then rested in wine barrels.
