The spirit begins as Wyoming Whiskey’s flagship straight bourbon, aged for five years in new charred American oak barrels. It then undergoes a secondary maturation in decades-old Pedro Ximénez (PX) sherry casks. Bottled at a robust 100 proof (50% ABV), this double-cask finishing process layers rich dried fruit, fig, and dark raisin notes over a buttery vanilla core without sacrificing the base whiskey's structural strength.
The Distillery
Located in Kirby, Wyoming—a tiny town in the Big Horn Basin—Wyoming Whiskey was founded in 2006 with a mission to craft world-class bourbon using 100% regional ingredients. Founders Brad and Kate Mead and David DeFazio built their distilling process alongside industry legend Steve Nally, former Master Distiller at Maker's Mark. Every bottle utilizes non-GMO corn, wheat, and malted barley from local Wyoming farms and pure water drawn from a deep underground limestone aquifer. Sitting at 4,400 feet of elevation, Kirby's severe daily temperature swings drive the whiskey deep into the wood, delivering a distinct Rocky Mountain maturation profile.
