Buzzard's Roost Signature Double Oak Bourbon

The wood for the second barrel seasons for 18 months before it holds any whiskey.

Buzzard's Roost is a Louisville company founded in 2019 by Jason Brauner, who runs the bourbon bar Bourbons Bistro, and Judy Hollis Jones, its CEO. The whiskey in this bottle is sourced. The company buys aged bourbon and rye and puts it into a second barrel of its own design, which is where the "Double Oak" on the label comes from.

That second barrel is the whole idea. Buzzard's Roost says its American oak staves are seasoned for 18 months to reduce tannins, then toasted and given a light Char #1. Char is how hard the inside of the barrel is burned. #1 is the lightest common level, and Buzzard's Roost says the lighter char lets more flavor out of the wood. The company keeps 17 toast profiles and picks one per whiskey. Brauner calls it "our version of a spice rack."

Signature is the everyday bottle in that lineup. Buzzard's Roost says the bourbon spends over four years in new charred oak before it goes into one of those proprietary casks. The label reads "Finished in American Oak." The company's own site disputes the word and calls the second barrel the foundation. Either way, it's a straight bourbon at 100 proof, with a mash of 75% corn, 21% rye and 4% malted barley.

The name came from the road trips. Jones told Distillery Trail that while she and Brauner looked at properties, they kept seeing buzzards roosting on rickhouse roofs, then found a farm on Buzzards Roost Road. Pour it neat, or use it in an Old Fashioned where the cinnamon has room to show.

FAQ

What does "Double Oak" mean?
The bourbon ages first in a new charred oak barrel, then moves into a second barrel Buzzard's Roost makes from 18-month seasoned staves that are toasted and lightly charred. Every Buzzard's Roost whiskey goes through that second barrel.

Does Buzzard's Roost distill this bourbon?
No. Buzzard's Roost says it sources aged whiskey and does the second-barrel aging itself. It doesn't name the distillery.

How is Signature different from the Cigar Blend?
Signature is the 100-proof everyday bottle. Cigar Blend is 105 proof and goes into a lightly charred, heavily toasted second barrel chosen to sit next to a cigar.
