Virginia Distillery Co. started out blending its young malt with aged Scotch. Courage & Conviction, launched in 2020, was its first whisky made entirely in Virginia: malted, mashed, distilled in two copper pot stills built in Scotland, aged and bottled in Lovingston, at the foot of the Blue Ridge.
The name is the founder's. Dr. George Moore, who died in 2013 before the distillery was finished, liked to tell people to "have the courage of your convictions." His wife Angela and son Gareth took the line as the brand.
Bourbon Cask is the most classic of the range. The whisky spends its whole time, at least four years, in first-fill casks that held Kentucky bourbon. First-fill means this is the first whisky to go into the barrel after the bourbon came out. Virginia Distillery says the casks add depth and complexity. It's bottled at 92 proof with no chill filtering and no added color.
A good first American single malt, and an easy one to drink neat.
Is this a bourbon?
No. It's a single malt, 100% malted barley, aged in barrels that held bourbon.
What does "first-fill" mean?
The cask's first use after the bourbon was emptied out, before any other whisky has aged in it.
What is American single malt?
Whisky made from 100% malted barley at one distillery in the US. The federal government made it an official category in January 2025.
